Under the supervision of the legendary whisky expert Jim Swan a carefully considered combination of 1st fill ex-Bourbon and 1st fill STR - that's Shaved, Toasted and Re-charred ex-Portuguese red wine casks- were used to mature this flagship whisky. Kingsbarns distillery is owned by the Wemyss family, located in the lowlands, Dream to Dram is their flagship single malt which was matured in first-fill ex-Bourbon casks from Heaven Hill distillery in Kentucky, and first-fill STR (shaved, toasted and re-charred) barriques. Fast forward a decade to a time when over 50 new distilleries across the UK are pumping out sub-10 year old whisky and it’s likely that not all of the new starts will have survived. Wemyss was put on my radar thanks to my friend, Johnssen Li, who started importing in very small quantities a few years ago.
